Summer dishes are typically lighter than their winter counterparts. Why might you ask? Well, who wants to be overly full, weighed down, and hot? I certainly don’t. With the arrival of summer, my foods get cooler and lighter.
Here in the south beating the heat can take some effort so quick and simple meals rule my kitchen and meal plans.
While I do try to avoid my oven during the peak of summer, I did use it to roast these vibrant heirloom cherry tomatoes. If you prefer, this can be done on the grill as well. Especially if you use grilled chicken.
One of my absolute favorite summer salads is a caprese salad. It only seems natural to turn this into a full-fledged meal since I adore it so much.
Caprese pasta salad is a combination of summers freshest flavors served over angel hair pasta. Heirloom cherry tomatoes, fresh basil, sauteed chicken, and fresh burrata pair perfectly and make this simple dish an instant classic.
This recipe is also a great one to repurpose leftover chicken. I always grill extra proteins on the grill so I can repurpose them into quick meals later in the week. If you don’t do this, you should! You will be amazed at how much faster your weeknight meals come together. Everyone appreciates that right?!
This is also the perfect recipe to use up the abundance of tomatoes this time of year. If you planted tomatoes, this year chances are you are up to your ears (or about to be) in the vibrant, juicy globes of goodness.
A truly versatile recipe, this salad can be enjoyed warm or cold. It’s great to whip up a day ahead and have a scrumptious dinner waiting at home for you after a long day. Sound dreamy? With 30 minutes and 8 ingredients it can be your dinner tonight (or tomorrow)!

- 2 pints heirloom cherry tomatoes roasted
- 8 ounces gluten free angel hair pasta
- 2 pieces boneless skinless chicken breast sliced
- 2 whole fresh burrata cheese sliced open
- 1 cup fresh basil leaves
- salt and pepper
- olive oil
Ingredients

- Preheat oven to 400 degrees
- Cook pasta according to directions on package
- Wash and prep all produce
- Place tomatoes on sheet pan and lightly drizzle with olive oil
- Season with salt and pepper
- Roast tomatoes for 20 minutes
- While tomatoes are roasting, season chicken breast with salt and pepper and saute in skillet with olive oil
- Everything should be ready when tomatoes come out of the oven
- Serve pasta in a bowl topped with tomatoes, basil, and burrata. Feel free to add another drizzle of olive oil and enjoy!
