Ingredients
12
ounces
gf penne pasta
cooked as directed on package
2
tablespoons
olive oil
1
pint
grape tomatoes
1
bunch
asparagus
3
ounces
black olives
1
whole
shallot
sliced
1
clove
garlic
minced
3
sprigs
fresh oregano
1
bunch
dino kale
1
whole
lemon
juiced (zest optional)
salt and pepper to taste
Instructions
Prepare pasta
Wash and prep all produce
In a large skillet heat the olive oil over medium heat
Saute asparagus, shallot, tomatoes, and olives until asparagus is al dente (8-10 minutes)
Add garlic and stir.
Remove from heat and add kale, oregano, and lemon. Stir.
Cover and let sit for 5 minutes ( this wilts the kale)
Serve hot or cold and enjoy!
