Ingredients
Instructions
  1. Preheat oven to 350 degrees
  2. Grease muffin tin with baking spray
  3. In a large mixing bowl combine flour, sugar, salt, and baking powder. Mix well
  4. Create a well in the dry mixture and add the oil, milk, egg, and vanilla
  5. Mix well
  6. Fold in the zest, lemon juice, and poppy seeds
  7. Distribute evenly into your muffin tin and bake for 18-20 minutes until golden brown
  8. Remove from oven and cool for 5 minutes
  9. Remove from muffin tin and place on baking rack to continue cooling
  10. Serve warm or room temp
Recipe Notes

If you prefer a less crusty muffin, use muffin/cupcake liners instead of the sprayed muffin tin
