Ingredients
Instructions
  1. Gather all ingredients
  2. Wash produce
  3. Roughly chop carrots, onions, and celery
  4. Set aside
  5. Mince garlic
  6. Set aside
  7. Pick the chicken off two rotisserie chickens and place in bowl
  8. Place large stockpot on stove and turn on medium heat
  9. Add 1-2 tbsp olive oil
  10. Add onion, garlic, celery, and carrots to stockpot
  11. Add a pinch of salt
  12. Cook until veggies are tender
  13. Add stock to pot along with bay leaf, black peppercorns, and parm rind
  14. Bring to a boil and reduce heat to simmer
  15. Cook for about 1 1/2 hours
  16. Add noodles and cook about 20 minutes longer until they are cooked thoroughly
  17. Salt and pepper to taste
  18. Serve. Garnish with parsley if desired
