Ingredients

cup
jasmine rice
13.5
oz
lite coconut milk
1/2
cup
water
2
whole
lemongrass stalks
trimmed and split
1
bunch
fresh cilantro
salt and pepper to taste
Instructions
Rinse rice and add to your instant pot
Add coconut milk and water to instant pot. Stir well
Layer the cilantro and lemongrass on top of the rice
Cook on “Rice” function on instant pot
Discard lemongrass and cilantro and fluff the rice
Serve with fresh chopped parsley and enjoy!
