Beef and Broccoli Recipe: Slow Cooker or Instant Pot!

Ingredients
1
1.5-2 lb
rump roast
can substitute any cut of beef you have on hand
1/2
cup
tamari gf soy sauce
any gf soy sauce can be used
1
tbsp
fresh ginger
diced
3
cloves
fresh garlic
sliced
1
pinch
red pepper flakes
1
whole
onion
halved and sliced
pepper
to taste
Salt
to taste

fresh pineapple
cut into chunks
1
head
broccoli
cut into large pieces
1/4
cup
pineapple juice
1/4
cup
water
1/4
cup
gf cornstarch
1
package
pad thai rice noodles
prepared according to package
1
tbsp
white sesame seeds
optional garnish
Instructions
Wash all produce
Dice ginger root; set aside
Half and slice onion; set aside
Slice garlic; set aside
Cut broccoli into large chunks; set aside
Cut pineapple into chunks; set aside
Add roast to instant pot
Season with salt, pepper, and red pepper flakes
Add tamari sauce, pineapple juice, pineapple chunks, broccoli, ginger, onion, and garlic
Cook on low for 6 hours
Remove roast and cut into chunks/ strips (if needed) and place back into sauce
Last 30 minutes, make rice noodles according to package directions
While noodles are cooking, make a slurry with 1/4 cup water and 1/4 gf cornstarch
Add to instant pot and stir
Turn instant pot to saute to thicken sauce quicker*
Stiring occasionally
Serve beef and broccoli over rice noodles and garnish with white sesame seeds
Recipe Notes
*If using a slow cooker, stir in slurry. Cover and cook on high for 20 more minutes
