Instructions
  1. Preheat oven to 350 degrees
  2. Gather all produce
  3. Dice onion, bell pepper, zucchini, and squash
  4. Set aside
  5. Slice mushrooms
  6. Set aside
  7. Wash spinach
  8. Set aside
  9. In a small cast iron skillet on medium-high heat, melt butter
  10. Add all veggies except spinach
  11. Saute until onions are translucent and tender
  12. While sauteing veggies, add eggs to a mixing bowl and beat thoroughly
  13. When veggies are almost ready, add spinich to skillet and wilt
  14. Add beaten eggs
  15. Reduce to medium heat and cook eggs until the sides begin to set
  16. Transfer skillet to oven and cook another 8-10 minutes or until eggs are set
  17. Remove from heat and cool for 5 minutes
  18. Sprinkle nutritional yeast on top
  19. Slice and serve
