Instructions
  1. Follow the directions on the package to prepare quinoa
  2. Wash all produce. Dice tomatoes, cucumber, olives parsley, and bell pepper. Set aside
  3. In a small bowl, combine the olive oil and lemon juice/zest. Whisk until emuslified. Add salt and pepper to taste.
  4. Once quinoa is done cooking, combine veggies and dressing in a large bowl with quinoa. Mix thoroughly.
  5. This can be refrigerated now until you are ready to eat or you can eat right away.
  6. Serve over the salad greens and enjoy.
  7. Refrigerate any leftovers
