Creamy Roasted Vegetable Soup
Eat your vegetables! This is a healthy and great tasting soup. It has a thick and creamy texture and goes well as a side to complement a heavier entree.

  1. Preheat oven to 450 degrees
  2. Wash and chop all veggies
  3. Add all vegetables to roasting dish or baking pan
  4. Generously coat with olive oil and salt and pepper
  5. Roast for 45 min to 1 hour (until all veggies are tender)
  6. Transfer to bowl or large pot if using an immersion blender. Add stock Blend until smooth. Add heavy cream and continue blending. Once smooth stir in butter and serve.
