Ingredients
Baked Salmon with Lemon and Dill
Rice Bowl with Kale and Lemon
Instructions
  1. Preheat oven to 375 degrees
  2. Add rice, water, and sea salt to instant pot
  3. Seal and turn on rice function*
  4. Line baking sheet with foil
  5. Add a drizzle of olive oil to foil
  6. Place salmon on oiled foil
  7. Drizzle olive oil over salmon fillets
  8. Sprinkle salt, dill, and lemon zest on salmon
  9. Bake for 18-20 minutes depending on thickeness of fillet
  10. Cook under broiler for 2-3 minutes to get a golden brown “crust”
  11. Remove from oven
  12. The FDA recommends fish be cooked to 145 degrees
  13. The rice should be ready now
  14. Add lemon juice to rice and fluff with fork
  15. Add rice to serving bowl and top with salmon pieces, lemon slices, and dill
  16. Salt and pepper to taste
  17. Serve

*If you don’t have an instant pot, cook rice according to directions on package

**The salmon is delicious served alone as a protein if you are trying to avoid or limit starches/carbs
